Summer Party Mix

I love Chex mix but felt like a different flavor. I wanted something lighter. More, refreshing if you will, after all, we are already into our summer weather down here. I found a recipe for a lemonade Chex mix so I took that as the base and put my own twist on it.

Summer Party Mix
  • 2 1/4 cups rice squares cereal
  • 2 1/4 cups corn squares cereal
  • 3/4 cup salted/roasted almonds
  • 1/2 cup craisins (or your favorite dried fruit)
  • 1/2 cup yogurt covered raisins
  • 2 tablespoons butter, melted
  • 3 tablespoons frozen lemonade mix, thawed
  • 1 tablespoons splenda

Preheat oven to 250 degrees.

Mix cereals, dried fruit and almonds on a large bowl.

Mix butter, lemonade and splenda in a small bowl. Microwave for 30 seconds then blend.
Pour over the cereal mixture and stir well.

Spread in a single layer on a lined baking sheet. Bake for one hour stirring every 15 min. Let cool. Mix in the yogurt covered raisins. Store in an airtight container.
