- Jicama ~ [hick-ah-mah] it is like a cross between a potato and an apple without all the starch and carbs ~ diabetic friendly and oh soo good!
- Grape Tomatoes
- Carrots ~ baby (cut in half lengthwise) matchstick (Blue Girl has braces and can't eat the baby carrots)
- Cucumber (center)
I keep mine in a Tupperware that serves both as a storage and can be used for service.
Place a dampened paper towel over the top of the veggies and snap the top on the container.
Place in fridge. It will keep for up to a week like this. Veggies stay crisp and as long as the paper towel is not too moist, will not mold.
