BBQ Chicken

Here is this week's menu that I posted last week:

Sunday: Grilled Chicken leg quarters , Rice, Green Beans Monday: Meatloaf, Mashed Potatoes, Peas Tuesday: BLTs, French Fries (homemade fries) Wednesday: Fish, Baked Potatoes, Salad (fresh caught fish grilled, Ash Wednesday ~ start of Lent) Thursday: Dirty Rice, Salad (rice will have shrimp and sausage in it) Friday: Homemade Cheese Pizza, salad Saturday: Leftovers ~ or as we like to call it: FFY (Fend For Yourselves!)


So that would make today, grilled chicken leg quarters, rice and green beans.

When I bought the chicken it was already seasoned for the BBQ. It was on sale for 99 cents per pound. I just threw the chicken on the grill directly over the heat for a few min. to sear and color it, then moved it over to the side of the grill so it was getting indirect heat and let it cook for an hour, turning twice.

  • 5 - chicken leg quarters ~ 3.49
  • 1 cup rice ~ 40 cents
  • 1 3/4 cup chicken broth w/herbs ~ 2 cents (homemade/canned)
  • 1/4 onion, chopped ~ 27 cents
  • 1 can green beans ~ 1.09
Total cost: $5.27
