Cold Packed Pork

Last night I went ahead and canned my pork. It had been cut up and sitting in the fridge, seasoned, for about 24-25 hours.

I just took the chunks, packed them into the quart jars, made sure the rims were clean and put the lids on. I had a quarts worth of the roast left over from the other night so I just canned it too after seasoning it for tamales.
